Summary:
 

Potatoes, like corn, were first discovered and cultivated by Native Americans. They grew naturally in the high Andes Mountains in South America. Potatoes are a great crop because they are tough, good in storage, and have a high nutritional value.

          In 1780 the Irish recognized the potato’s amazing qualities. Unfortunately, around fifty years later, the Irish had become so dependent on the crop that when it failed due to a fungus, many people starved. This was called the Potato Famine.

          Although the potato itself is very healthy, it can be dangerous. Its leaves are poisonous. Also, if a potato is left in sunlight, it turns green and forms a chemical that makes people sick.
